A process for producing a fermented malt drink which comprises the storage step of storing a yeast in a yeast-storage tank, the step of adding the thus stored yeast to a wort and fermenting the same to give a fermented malt drink, the step of feeding the stored yeast as described above into the above-described fermentation step, and the step of collecting the yeast cells precipitated in the above-described fermentation step and returning them to the storage step as described above, wherein, while maintaining the yeast-containing liquor at a low temperature not lower than the freezing point in the above-described yeast-storage step, an oxygen-containing gas is fed into the yeast-storage tank in such an amount that the yeast can sustain its biological activity but cannot proliferate; in the above-described yeast-feeding step, the yeast is fed into the above-described fermentation step in an amount corresponding to 40 to 80% of the fermentation expression level; in the above-described fermentation step, the oxygen-containing gas is fed, in such an amount as allowing the proliferation of the yeast up to the fermentation expression level in the above-described fermentation step, into the fermentation tank so as to conduct alcohol fermentation simultaneously with the proliferation of the yeast; a yeast-collecting tank having been sterilized inside is connected to the bottom of the above-described fermentation tank; and the yeast cells precipitated in this yeast-collecting tank are transported into the above-described yeast-storage tank.
