A filling composition for Soondae(Korean traditional sausage) and a preparation method thereof are provided to ensure health improvement, physical strength recovery and physical constitution improvement by adding seasoning and various herbal drugs containing ginseng. A filling composition for Soondae(Korean traditional sausage) comprises 0.2-4wt.pt. of ginseng, 0.02-1wt.pt. of Saururus Herba, 0.08-2wt.pt. of green tea leaves, 0.05-2wt.pt. of Astragali Radix, 0.05-2wt.pt. of Cassiae Semen, 0.03-3wt.pt. of Bos taurus var. domesticus, 0.05-2wt.pt. of Peony Root, 0.01-0.3wt.pt. of Piperis nigri Fructus, 0.05-3wt.pt. of outer leaves of Chinese cabbage, 0.05-2wt.pt. of glutinous rice, 0.05-2wt.pt. of large leek, 0.05-2wt.pt. of onion, 0.03-1.5wt.pt. of Lentinus edodes, 0.05-2wt.pt. of carrot, 0.05-2wt.pt. of cabbage and 0.05-1.5wt.pt. of Korean leek. A method for preparing the filling composition for Soondae includes the following steps of: preparing an outer cover for Soondae; filling the outer cover with the filling compositions and closing both ends of the outer cover; and inputting the Soondae in a cooking container and steaming the Soondae for 10-80 minutes.
