Wheat Flour, which is a component of starch Amylase content in weight between 15.0% and 30.0% in weight and the content of resistant Starch of more than 5.0% by weight, and which contain these Edible Wheat flours.In addition, the present Invention relates to methods for the preparation of these flours of wheat resistant Starch and its use as a prebiotic, or how to prepare food with Low Glycemic Index. It also relates to Nucleic Acid Molecules, which encode a soluble Starch synthase II, as well as vectors containing such Nucleic Acid molecules.In addition, the present Invention also relates to host cells and Plants comprising such Nucleic Acid molecules and vectors.
