PURPOSE: A multi-type anti-diabetic food composition is provided to use ganoderma lucidum or tartary buckwheat including a bitter substance having the anti-diabetic effect, and to minimize side effects by using the composition for a long time. CONSTITUTION: A multi-type anti-diabetic food composition is obtained by injecting a lactic acid bacteria culture solution to a mixing extract containing a bitter substance, and fermenting the mixture. The fermented mixture is separated into fungi and a supernatant solution. The supernatant solution is vacuum-freeze dried to make the anti-diabetic food composition. A lactic acid bacteria strain for the lactic acid bacteria culture solution is lactobacillus acidophilus.
