PROBLEM TO BE SOLVED: To provide an apparatus for suppressing oil deterioration that implements a countermeasure against cooking oil deterioration with a focus on prevention of generation of amphipathic substances which are the cause of generation of polar compounds and decomposition of the amphipathic substances.;SOLUTION: The apparatus 100 for suppressing oil deterioration includes: a vibration generation part 10 which provides vibration to oil; and an oil recovery part 20 which separates and removes the amphipathic substances and moisture included in the oil from the oil to which the vibration is provided in the vibration generation part 10.;COPYRIGHT: (C)2011,JPO&INPIT
