PROBLEM TO BE SOLVED: To provide raw Chinese noodles capable of being deliciously eaten by using noodle-cooking hot water as soup raw water, although the raw Chinese noodles are not heat-treated, and capable of being produced by conventionally used facilities for producing the raw Chinese noodles, without requiring specified facilities for producing the raw Chinese noodles.;SOLUTION: This raw Chinese noodles are prepared by kneading flour in an amount of 100pts.wt. with potash water in an amount of 0.1-0.5pt.wt. and water in an amount of 25-35pts.wt., without heat-treating the materials. Further, the raw Chinese noodles are used in a method for cooking the noodles comprising a process for putting ingredients in a stir-frying pan and then stir-frying the ingredients, another process for adding the soup raw water to the the stir-frying pan containing the stir-fried ingredients and then boiling the water, a third process for adding the raw Chinese noodles to the stir-frying pan containing the stir-fried ingredients and the soup raw water and then boiling the noodles, and the other process for adding condensed soup to the stir-frying pan containing the ingredients, the soup raw water, and the raw Chinese noodles.;COPYRIGHT: (C)2004,JPO
