PPROBLEM TO BE SOLVED: To provide a practical and effective method for producing barley malt (PYF negative malt) having suppressed early flocculation of yeast where the specification of malt other than the early flocculation of yeast are not influenced by treatment of barley of malt raw material in the immersion step in a malt production process in a method for producing malt using barley for forming premature yeast flocculation factors (PYF factors). PSOLUTION: In the method for producing malt using barley for forming early flocculation factors of yeast, PYF negative malt having suppressed the early flocculation of yeast is produced by treating barley of malt raw material using one or two or more PYF factor reducing substances such as sodium hypochlorite, chlorhexidine gluconate, chlorhexidine acetate, and chlorhexidine chloride in the immersion step in the malt production process.
