PURPOSE: A manufacturing method of black bean sauce(jja-jang sauce) is provided to reduce greasy of food by adding soybean protein, chup and cayenne pepper in the sauce without using black bean paste for making the sauce. CONSTITUTION: A manufacturing method of black bean sauce(jja-jang sauce) is includes the following steps: boiling bean oil; putting soybean protein 25-200 parts by weight and soy sauce 25-200 parts by weight in the boiling oil 100 parts by weight; putting vegetables 300-1000 parts by weight, ketchup 5-50 parts by weight and cayenne pepper 5-50 parts by weight in the boiling oil; and parching the oil.
