PROBLEM TO BE SOLVED: To provide a soy sauce for stir-fried dishes with which a stir-fried dish with an excellent flavor can be cooked in a short period of time.;SOLUTION: The soy sauce for stir-fried dishes contains a soy sauce-saccharides heated mixture whose absorbance of light in 430 nm of a 0.1 %(w/w) water diluent indicates a value of 0.05-0.40, and a soy sauce, wherein the compounding ratio of the soy sauce-saccharides heated mixture and the soy sauce is within a range of 0.5:9.5-5:5 in a weight ratio.;COPYRIGHT: (C)2012,JPO&INPIT
