PPROBLEM TO BE SOLVED: To provide a sleep determination device and a sleep determination method which attains precise determination of a sleep stage on the basis of heartbeat information relating to a subject. PSOLUTION: The sleep determination device and the sleep determination method obtain the heartbeats of the subject (S10), calculates the heartbeat period of each heartbeat on the basis of the obtained heartbeats, calculates difference values to the N-th difference value set previously with difference values before and after the heartbeat as the first difference values and with difference values before and after the first difference values as the second difference values (S12), generates a return map and a histogram which indicate the distribution of each value of the heartbeat period and the first to N-th difference values in a predetermined time (S14, S16), and determines the sleep stage of the subject on the basis of the generated return map and the histogram by referring to a preset return map and a preset histogram for determination of each sleep stage (S20).
