PROBLEM TO BE SOLVED: To provide a method for producing an easily cookable loosened tempeh fungus fermented food, for further easily and efficiently loosening into pieces a tempeh fungus fermented food bound in a block-like state.;SOLUTION: This method for producing the loosened tempeh fungus fermented food comprises passing a process of crushing soybeans 11 as the raw material, husking and wind selecting the crushed soybeans, making steamed soybeans 15 through washing the crushed husked soybeans 12 and soaking and steaming the soybeans followed by dehydrating/heat radiating, and inoculating tempeh fungus 16 to the steamed soybeans 15 followed by filling in a punctured bag, and fermenting the product, and heat sterilizing the packaged tempeh fungus fermented food 17 obtained in the fermentation process, and giving impact to the product together with the punctured bag while it is hot followed by loosening to a crushed husked soybean form 12.;COPYRIGHT: (C)2009,JPO&INPIT
