PURPOSE: A coating solution for producing dried persimmon, and a producing method thereof are provided to coat soft persimmon before drying the persimmon. CONSTITUTION: A coating solution for producing dried persimmon contains 0.1-0.5wt% of ascorbic acid, 0.1-0.5wt% of beta-hydroxytricarboxyl acid, and 1-3wt% of mineral solution. A producing method of the coating solution comprises the following steps: adding the ascorbic acid into water, and stirring the mixture for dissolving; dissolving the beta-hydroxytricarboxyl acid in the mixture, and aging the mixture; and adding the mineral solution containing50-200mg/L of iron, 10-400mg/L of magnesium, 5-10mg/L of potassium, 0.5-3mg/L of zinc, 90-150mg/L of calcium, and the balance of water.
