The present invention relates to a method of extracting valued materials from krill, and, in particular, an extraction method comprising a step of drying and crushing krill; a step of mixing the crushed krill with water to manufacture a slurry mixture; a step of filling the slurry mixture within a reactor; a step of hydrolyzing the slurry mixture with subcritical water by maintaining the pressure and the temperature inside the reactor at 10-220 bar and 110-370; and a step of collecting the krill hydrolysate. The present invention is able to provide the extract which is environment-friendly contrary to the conventional technology in that the valued materials are extracted from krill by hydrolysis with subcritical water, and has excellent properties in function and quality contrary to the extract by the conventional technology. Moreover, a very high productivity is able to be expected by employing the method of hydrolyzing the krill slurry in the supercritical state. The present invention has the advantage capable of enlarging applicable areas in that the extract without oil components is able to be provided in case the hydrolysis is conducted after oil contained in krill is removed in an environment-friendly way.
