The present invention relates to a process for the preparation of complexes comprising amylose assembled with at least one organic molecule of interest. This method according to the invention comprises the following steps: (a) a lipophilization step of grafting a fatty aliphatic chain on said organic molecule of interest, for the preparation of a lipophilic derivative of said organic molecule of interest, ( b) a step of bringing into contact between (i) said lipophilic derivative of said organic molecule of interest bearing said grafted fatty aliphatic chain, resulting from said lipophilization step (a), and (ii) said amylose, and (c) a step of forming said amylose / lipophilic derivative complexes of the organic molecule of interest. The present invention also relates to organic chemical compounds in the form of a complex, comprising amylose assembled with at least one organic molecule of interest, in which the said organic molecule of interest is in a lipophilic derivative form, carrying a fatty aliphatic grafted chain.
