Method for molding e.g. biscuits, in bakery for personalized marking of biscuits, involves performing molding operation in food product, and unmolding molded product comprising relief mark in portion in contact with relief cavities
The method involves applying a molding insert (4) inside a rigid or flexible mold (1), where the insert comprises relief cavities (5, 6) in a face turned toward inner volume of the mold. Food product is introduced into the mold until the product covers the insert. Molding operation is performed in food product so that the food product is solidified in the mold. The molded product comprising a relief mark in its portion in contact with one of the cavities is unmolded, where the mark has a form that is partially complementary to that of the cavities. The molding insert is made of material selected from metallic-, ceramic-, polymeric and composite materials with synthetic resin matrix reinforced by reinforcement of organic or inorganic and synthetic fibers, high-temperature resistant polymer and silicone elastomer. An independent claim is also included for a device for molding food products.
