PROBLEM TO BE SOLVED: To provide a method, capable of making a treatment for securing a passage for simply and inexpensively introducing an enzyme liquid into the skin tissue of a persimmon fruit without making physical perforation so that the persimmon fruit can be peeled efficiently.;SOLUTION: A method for peeling a persimmon fruit includes: a first process of treating a persimmon fruit with a surfactant; a second process of heat treating the persimmon fruit subjected to the first process; a third process of treating the persimmon fruit subjected to the second process with an enzyme; and a fourth process of removing at least an outer fruit skin of the persimmon fruit subjected to the third process, which are sequentially conducted.;COPYRIGHT: (C)2014,JPO&INPIT
