Selective separation of trans fatty acids with cyclodextrins

Disclosed is a method whereby trans-fatty acids can be quickly and energy-efficiently removed from a solution of an organic solvent such as a vegetable oil. Specifically disclosed is a method for selectively removing trans-fatty acids with the use of a cyclodextrin, characterized by comprising: a step for adding the cyclodextrin to a solution of an organic solvent containing trans-fatty acids; and a step for contacting the trans-fatty acids with the cyclodextrin.
