Maillard flavor compositions with polar solvents other than water and methods for producing such compositions. The present invention relates to a maillard flavor composition comprising a structured lipid phase, a polar solvent other than water and at least one maillard reaction product. The invention also relates to a method for producing said composition in a structured lipid phase using a polar solvent other than water. The compositions are useful for enhancing the palatability of foods, dietary supplements, medications and the like.
