The present invention relates to a process for desalting liquid products of the food industry, such as wine, musts and juices, by repeated repeated electrodialysis of the desalted product in a continuous mode, with a recycle of electrodialysis. The flow rate of the treated product is controlled based on its output conductivity so that the product passes through repeated cycles of electrodialysis until the ultimate ultimate conductivity is reached at which the repetition of the dialysis process is terminated. The final product conductivity is calculated from the knowledge of initial conductivity and product pH, alcohol content, glycerol and extract, potassium concentration, dominant organic acid content such as tartaric acid, malic acid and lactic acid, minor organic acid content, and minor inorganic salt content. Further, the invention relates to an electrodialysis unit with automatic control for carrying out the method according to the invention.
