The invention relates to a novel nucleotide sequence coding for an enzyme having dextransucrase activity, isolated from a bacterial strain of Lactobacillus sakei that can produce exopolysaccharide, more specifically from pork loin lunch meat. The invention also relates to the method for obtaining and purifying said exopolysaccharide, as well as to the use of the exopolysaccharide as an antiviral agent in the treatment of fish species, mainly salmonidae. The invention further relates to dietary or veterinary pharmaceutical compositions containing said exopolysaccharide.
