PROBLEM TO BE SOLVED: To easily and rapidly evaluate degradation due to oxidization of fat in a fat emulsion.;SOLUTION: The present invention provides a method for evaluating oxidization of fat in a fat emulsion, which evaluates oxidization of fat in a fat emulsion containing fat and water, using a luminol chemiluminescence method. By measuring the intensity of chemiluminescence obtained through a reaction of luminol as a chemiluminescence substance and reactive oxygen species or a lipid peroxide generated by fat oxidization, easy and rapid evaluation becomes possible of degradation due to autoxidation of fat emulsion.;SELECTED DRAWING: Figure 1;COPYRIGHT: (C)2017,JPO&INPIT
