The present invention provides an improved process for preparing S-allylthioglutathione, wherein the reduced glutathione is reacted with diallyl disulfide in an organic solvent to form S-allylthioglutathione. It further provides a variant of this process wherein first the reaction with sulfane is oxidized glutathione to form a mixture of reduced glutathione and thioglutatin, and the mixture is then reacted with dimethylallyl disulfide in an organic solvent to form a mixture of S-allylthioglutathione with S-allyldithioglutation. This mixture is new and is also the subject of the present invention. The invention also provides S-allyldithioglutation which is newly prepared.
