The present invention relates to a method for producing coffee green beans with enhanced chlorogenic acid content, coffee green beans with enhanced chlorogenic acid content manufactured by the method and a method for improving chlorogenic acid content in coffee green beans. The coffee green beans with enhanced chlorogenic acid content is manufactured by the following steps: (a) disinfecting Arabica coffee green beans, soaking the same in water and germinating the same; (b) sterilizing the germinated coffee green beans in the step (a); (c) inoculating Bacillus subtilis strains to the sterilized coffee green beans in the step (b) and fermenting the same; and (d) drying the fermented coffee green beans in the step (c).
