PROBLEM TO BE SOLVED: To stably and efficiently heat a food material to be gelatinized when heated.;SOLUTION: A Joule heating device 10 energizes a food material to be gelatinized when heated while being conveyed to a food passage and has an external electrode 11 and an internal electrode 23. Between both electrodes, a food passage 25 is formed making the food material flow therein. To the food material flowing in the food passage 25 by an energization unit 36, electric power is supplied in the direction transverse to the flow direction.
