摘要

The present invention relates to a device and a method for expecting growth of dynamic microorganisms in kimchi, a computer readable recording medium recording a program for executing a method thereof, and a safety management system of kimchi using the same. According to the present invention, the method for expecting growth of dynamic microorganisms in kimchi comprises the steps of: determining a primary model for microorganism growth based on data about microorganism growing patterns in kimchi for each storage temperature, and calculating parameters on the number of initial germs, a growth rate, a death rate, a lag phase duration or a shoulder period of the microorganism for each storage temperature; deriving a secondary model according to changes of storage conditions of the calculated parameters; and deriving a dynamic model by using the parameter values calculated in the primary model and the secondary model to expect microorganism growth in kimchi under a variable temperature condition. The present invention can expect a growth of microorganism under a variable temperature condition, and provide a safety management standard for safe intakes of kimchi and risk evaluating information.
