PROBLEM TO BE SOLVED: To stably produce a metastable austenitic stainless steel sheet having high reliability by efficiently controlling the structure of a metastable austenitic stainless steel sheet, mainly refining crystal grain sizes and further improving the excellent characteristics original in the metastable austenitic stainless steel sheet.SOLUTION: A metastable austenitic stainless steel sheet is cooled to a cooling temperature being a temperature of starting martensitic transformation with liquid nitrogen and is thereafter heated to a heating temperature being a temperature of starting the transformation of an austenitic host phase to control structural regulation, thus a metastable austenitic stainless steel sheet in which crystal grains are refined is produced.SELECTED DRAWING: Figure 1
