The present invention relates to the use of proteases obtained from danaus plexippus caterpillar intestines for the hydrolysis of milk proteins and with potential for the production of hypoallergenic milk formulas. This invention is an alternative, not a substitute, for the use of commercial microbial proteases or other biological sources. the main advantages of using intestinal proteases of d. plexippus are: 1- effective hydrolysis capacity of the main milk proteins (caseins); 2- effective hydrolysis capacity of the β-lactalbumin and ß-lactoglobulin proteins, known to be resistant to various proteases; 3 - intestinal proteases have high specific proteolytic activity, do not undergo autolysis or inactivation until 2 h at 37 ° C and act at optimal temperature of 37 ° C and optimum alkaline ph or milk ph.
