The invention relates to a process for fast electrochemical determination of the total antioxidant capacity of hydrosoluble vegetable extracts, using an electrochemical portable platform with gold nanoparticles. The claimed process has the following stages: 1. performing the measurements for optimizing the pH of the electrolyte, which is a buffer solution of sodium phosphate with a concentration of 0.1M NaPB for detecting HO, the optimal value being pH = 7.0; 2. performing measurements for optimizing the working potential applied to the portable platform used for electrochemical measurements in the electrolyte for detecting HO, the optimal value being of 0.55 V vs. Ag/AgCl; 3. solutions with concentrations of 10, 20, 40, 60, 80, 100, 150 and 200 μ M are prepared by using the standard Trolox antioxidant diluted in electrolyte and the current intensities Iand I, respectively, are recorded, after adding 0.5 mM HOusing a dedicated software; 4. determination of the total antioxidant capacity TAC by using the relation TAC = I/I implemented in the dedicated software, which is graphically represented depending on the concentration of Trolox TAC = f(C) in order to obtain the calibration curve of the portable platform for Trolox, which is used as reference for reporting TAC in Trolox equivalent of the hydrosoluble vegetable extract; 5. the analyzed hydrosoluble extract is diluted in electrolyte in a ratio of 1:40 and, by using the mobile portable platform, the current intensities Iand I are recorded in triplicate, after adding 0.5 mM HO, in order to calculate the TAC by using the relation TAC=I/I implemented by the dedicated software; 6. the Trolox equivalent corresponding to an average TAC is calculated in relation to the calibration curve for Trolox and it is displayed on the electronic display of the portable platform.
