The invention relates to a process for extraction of pectin from dried cacao pod husk by enzymatic process using cellulase. The condition for the enzymatic process were disclosed herein including cacao pod husk: buffer ratio, the level of cellulose and the time of cellulose reaction to obtain maximum pectin yield.
