The present invention relates to a method for producing chitosan scorched rice comprising the following steps: (1) adding chitosan to water and preparing rice water; (2) adding the rice water prepared in the step (1) to rice and steaming the same; and (3) molding, baking and cooling the steamed rice from the step (2), and chitosan scorched rice produced thereby. The chitosan scorched rice of the present invention has excellent nutrition and functionality, reduced sodium content and improved preference.
