The present invention relates to a process of manufacturing a citrus fruit concentrated liquid by combining thin-film concentrating technology with PEF technology, and a citrus fruit concentrated liquid manufactured by the same. The process of manufacturing a citrus fruit concentrated liquid by combining thin-film concentrating technology with PEF technology comprises: a step (A) of extracting citrus fruit, putting an extracted liquid to a centrifugal thin-film concentrating device, and manufacturing a concentrated liquid at 35-55°C; and a step (B) of putting the citrus fruit concentrated liquid to a batch or continuous processing container, and performing high-voltage pulse electric field processing with 1-40 us of a pulse width, 50-400 Hz of a frequency, and 1-80 kV/cm of electric field strength. The present invention can minimize loss of sensual properties such as unique color of the citrus fruit, flavor, etc.
