To develop a baumkuchen dough having a stable condition, and good work efficiency.SOLUTION: In a first embodiment, the baumkuchen dough is provided that contains 3-35 pts.mass of an oil-in-water type emulsion with respect to 100 pts.mass of a cereal powder and/or starch, wherein the content of an emulsifier in the oil-in-water type emulsion is 5-25 mass%. In a second embodiment, the baumkuchen dough is provided that is identical to the baumkuchen dough in the first embodiment except that an emulsifier included in the oil-in-water type emulsion is a fatty acid ester of glycerin. In a third embodiment, the baumkuchen dough is provided that is identical to the baumkuchen dough in the first or second embodiment except that the cereal powder includes a cereal powder containing 4 mass% or more of a food fiber.SELECTED DRAWING: None
