Extruded snack foods from a cereal-legume-root crop blend were developed by extrusion. In particular, a deep-fried crunchy/kropeck prepared by cold extrusion and an expanded puffed curls type is described. Both types of snack foods were made from a blend of rice-cowpea-sweet potato and have a shelf-life of seven (7) months packed either in polyethylene (PE) bag or poly-foil laminate.
