The present invention relates to a method for cultivating a barley sprout and a barley sprout cultivated by the method. According to an embodiment of the present invention, the method for cultivating a barley sprout with an increased saponarin content comprises: a step of preparing a barley seed on a seed tray; a step of supplying water to the barley seed positioned on the tray; a step of germinating the barley seed by covering the tray on which the barley seed having the water is positioned with a cover and increasing humidity; a step of performing LED light treatment in germinated barley and supplying a stimulant to the germinated barley; and a step of performing the previous step and harvesting the barley after 1-3 days. According to the present invention, the barley sprout has the increased saponarin content.
