It has been known that the steroids contained in the fish vary according to the species and habitats. To analyze the steroids from some species of fish and fish products, gas-chromatographic determination was performed. The study for the most satisfactory conditions to analyze steroids gave the best result when SE-30 was used for the stationary liquid phase. As the results of the analysis of the steroids from these fish and fish products by this method, cholesterol, cholestenol, cholestanol and ergosterol could be determined qualitatively and quantitatively, and, besides these substances, stigmasterol and some other unidentified sterols were found in these fish and fish products.
