Vanilla planifolia Andrews is one of three vanilla species that are cultivated in the world. Vanilla is the only edible orchid and has been used by the natives of Mexico, where vanilla had its origins, before the Spanish conquest of America. The parts of the plant that are used are the pods that come from the flower, after having been submitted to a process of dehydration. Once dehydrated, the pods present their characteristic aroma and flavor which make them unique, and favor their use as a flavoring in the elaboration of the finest sweets and in various other products such as fragrances.
