摘要

The dietary fiber extracted from the peels of passion fruit (Passiflora edulis f. flavicarpa Deg) was quantified and its physicochemical and functional properties characterized. A completely randomized 22 factorial design was performed, corresponding to a combination of two temperatures (60 ˚C and 70 ˚C) and two drying times (12h00min and 12h45min). Drying at 60 ˚C for 12h45min provided the best results as regards physicochemical and functional characteristics: total dietary fiber (TDF) 65.40 ± 3.77 g/100g, soluble dietary fiber (SDF) 37.84 ± 3.80 g/100g, insoluble dietary fiber (IDF) 27.55 ± 2.96 g/100g, moisture content 5.91 ± 0.34 g/100g, pH 4.43 ± 0.04, swelling 18.29 ± 0.04, solubility 17.51 ± 0.61%, water binding capacity (WBC) 13.91 ± 0.15 g water retained/g fiber, water holding capacity (WHC) 14.91 ± 0.15 g hydrated fiber/g fiber and oil binding capacity (OBC) 2.77 ± 0.06 g oil/g fiber. The extracted dietary fiber is shown to possess physicochemical and functional properties potentially beneficial for the consumer.
