Square-Wave Voltammetric Method for Determination of Fumaric and Maleic Acid—Determination of Fumaric Acid in Wine

A square-wave voltammetric method for determination ofudfumaric and maleic acid is developed. Both acids undergoudtotally irreversible redox reaction in neutral and acid media.udThe square-wave voltammetric response of the investigatedudacids is sensitive to pH, concentration of acids, type ofudthe supporting electrolyte, as well as of the exciting signaludparameters, such as frequency, amplitude and scan increment.udAll the experimental conditions as well as the instrumentaludparameters for quantitative determination of both acids were optimized. The detection limits of 116 mg/L for fumaricudacid, and 230 mg/L for maleic acid are estimated. The proposedudmethod enables simultaneous determination of fumaricudand maleic acid. The method is applied for determination ofudfumaric acid in 10 kinds of Macedonian wines.
