Use of Computer Simulation in School Foodservice.

摘要

Research scientists at the National Food Service Management Institute (NFSMI) initiated a study to explore applications for computer simulation in school foodservice operations. The objectives of this study were to determine the impact of varying job responsibilities of foodservice assistants serving meals from a serving line on the time to serve elementary students and to examine the effect of varying class arrival times into the cafeteria on the total time for students to move through the serving line.
