Food service and other commercial gas loads are threatened by the lack of, ormisleading, information used by the electric utilities and related organizations in an aggressive marketing campaign. The electric industry has exploited this situation by fostering the development of computer models which provide end users with economic analyses that clearly favor electric equipment. These models are based on vague assumptions, not research. The gas industry has conducted significant research, in the form of the GRI-sponsored CKV research project, that challenges basic electric industry assumptions and provides a sound technical foundation for unbiased energy analysis in the commercial food service area. There is also a wealth of information relating to modeling of commercial food service facilities and equipment that has not previously been usable by the majority of commercial foodservice decision makers. The kitchen COST computer analysis and modeling program integrates these analyses with databases of actual equipment performance. This provides vital operating cost and energy use information to the food service industry. The kitchen COST program is particularly user-friendly. It is intended for use by the typical local gas distribution company commercial foodservice marketing representative with only minimal training.
