摘要

Peas and snap beans are common vegetables in the normal diet of the Armed Forces and there is need for their preservation, in a light weight and non-perishable form for ready transportation overseas to troops in combat areas.nThe experimental work of this study was to be limited to laboratory or pilot plant scale work with ray materials grown and harvested under known conditions. The quality of the dehydrated samples was to be determined by a taste panal composed of Experiment Station personnel and this subjective evaluation was to be implemented where possible by objective tests.
