摘要

To accomplish the ultimate aim of this project the following problems were investigated and solved. Techniques were developed to permit uniform temperatures throughout the ham at the end of the thermatronic process. A method was devised for transferring the thermatromically processed product from the processing cell to a metal container with minimum bacterial contamination. A flash sterilization procedure was developed to kill any bacteria that were introduced during the transfer.
