THE POTENTIAL FOR ALFALFA PROTEIN CONCENTRATES FOR ANIMAL AND HUMAN CONSUMPTION

Analytical experiments and crop yields indicate that extraction of protein from fresh alfalfa or waste plant materials could provide abundant, good protein for monogastric animals, including man, and good fibrous feed for ruminants. Collaboration between farmers, agricultural engineers, biochemists, and feed or food industries could develop economical ways to extract and process this protein and greatly increase protein production.
