In April, 1975, it was determined that the Florida Department of Natural Resources would undertake a Fisheries Extension and Marketing Services Project which would last three years. The project became effective July 1, 1975, and was completed September 30, 1978. Funding of the project was supplied by federal as well as state funds. The objectives of the project were twofold. The first was to conduct an extension program designed to teach professional foods people and food educators in such areas as: fish cookery techniques; proper procedures in purchasing, handling, storage, and preparation; and nutritional value of seafood. The second objective was to maintain and expand demand for fishery products (with special emphasis on underutilized species).
