Postharvest Maintenance of Cellular Integrity of Fruits and Vegetables

The objectives of the workshop on which this report is based were (1) to explore the problems associated with delivering fresh fruits and vegetables, especially salad items, to the military; (2) to review recent and ongoing research and development activities on the maintenance of postharvest integrity, particularly as it may relate to these problems; (3) to propose research aimed at solving the problems.
