Food Fortification: Development of Food Fortification Programs

摘要

The success of food fortification programs, long considered by international nutritionists to be an important tool in solving developing country nutrition problems, has been less than overwhelming. This paper focuses on steps to foster and accelerate the use of food fortification by citing previous programs and suggesting ways to develop new ones. The U.S. Food for Peace program is highlighted as one of the largest food fortification programs in the world and its history is traced from the 1950's to the present.
