The most recent statistics indicate that the 1979 commercial blue crab harvests in the United States totaled better than 140 million pounds yielding a dollar value of about 30 million. In addition to illustrating the economic importance of the blue crab industry, the numbers suggest to the crab processor an even more important consideration: the better the quality, the greater the potential return for the investment. This report details handling, pasteurization and storage procedures that crab meat processors should follow to avoid contamination of the product and to maintain and improve the quality of the crab meat delivered to the marketplace.
