Development of Products from Underutilized Species of Fish. Booklet 11: Burbot Convenience Foods

The potential for using the freshwater species, burbot, for further processing was explored. Mechanically deboned (minced) burbot was used in several convenience products. Sensory evaluations comparing the burbot products with the same products made from white sucker were done. Precooked burbot fillet chunks were canned. Sensory evaluations of unadorned, canned fish, as well as the canned fish made into two products, were conducted. The authors recommend commercial canning of burbot as a potentially successful venture.
