This report contains papers on the state-of-the-art in equipment and systems for meal assembly, distribution, and service in hospitals today; the effects of these processes on the sensory, microbiological, and nutrient qualities of menu items served to patients; acceptability of these meals to patients; and future needs for research in hospital patient feeding systems.
