The Department of Agriculture conducted a study of the meal production process and operating costs associated with the National School Lunch and School Breakfast programs. This study was designed to: analyze the factors which influence meal costs in school feeding programs; assess the impact of selected variables, particularly menu choice, on meal costs; develop statistical models of the meal production process at the school district level; and, assess the relative efficiency of various school foodservice configurations. The findings summarized in this report are derived from a survey of a nationally representative sample of 566 school kitchens conducted during Spring, 1980.
